It is a little misleading to call Karkar an island, as it is in fact one large volcano. 60 miles across, and visible from over 50 miles away. But the rich soil you find here on the sides of the volcano is ideal for growing the finest cocoa, with its bold flavours, reminiscent of dates, walnut and red fruits.

With the cocoa trees’ yellow, red and orange pods, from a distance it can look like a tree on fire, say the founders of Firetree Chocolate.

This chocolate maker’s name also resonates with its sourcing of cacao from small islands on the Pacific Ring of Fire, all of which have a volcanic past. In some cases, the cocoa trees are still growing besides dormant volcanos.
