Ripened for 6 months to 1 year on the surface, this firm, washed-rind cheese is made of pasteurized cow's and sheep's milk with an orange rind speckled with white.
The texture of the paste made attractive by small crystals which develop with aging presents notes of cured meats and dried meat, hazelnut, pine nuts and straw. This cheese is reminiscent of a mix between an Emmental and a Parmesan.
The perfect cheese to complement the charcuterie platter to be enjoyed with a light red wine.
