Chemin Hatley Cheese


Made with organic thermized milk and matured for three to eight months on wooden boards, this firm farmhouse cheese has marked floral, almond and fruit aromas.

The milk comes from the herd of Holstein cows on the family farm, which holds organic accreditation. From mid-May, the cows are fed fresh grass in pastures with various species, such as white clover, wild clover, trefoil, alfalfa, as well as grasses such as timothy and brome. This living agriculture brings to the cheese specific tastes of the terroir of Estrie, a region dotted with steep mounds, valleys and mountains.
