Matured for 30 days, this washed-rind soft farmhouse cheese is made with pasteurized milk from the herd of brown Swiss cows from the Domaine de la Rivière farm.
The square-shaped wheel has a slightly bloomy orange crust under which hides a buttery yellow paste dotted with small openings. Its texture is creamy and melting. It is a cheese of medium to strong intensity that is similar to Pont l'Evêque, a French cheese.
With a dominant aroma of hazelnut. Long in the mouth, it tastes of butter with a vegetal and nutty side, a taste that becomes more intense with maturation.
