Ripened on the surface for 50 days, this semi-soft, washed-rind cheese is made with whole milk from cow herds in the Baie-Saint-Paul Valley. Its ivory-white paste is supple and homogeneous. Its scents are light, presenting notes of cream and yogurt. On the palate, it suggests a taste of butter and hazelnut. In cooking, this cheese is regularly used in sauce, stuffing or gratin. He also enjoys the company of a mead.

The Migneron de Charlevoix is ​​the first cheese made from cow's milk from the cheese maker. Its name, Le Migneron de Charlevoix, pays homage to the first wife of the ancestor of the Dufours in New France, Anne Migneron.
